Vacation Thoughts...Part 2

I am visiting family in New Hampshire this week. Meal preparation is a communal experience so we all end up eating out of our normal meal routine. My sister-in-law makes fantastic salads but there are few foods that I like less in the world that cole slaw.  I was a little reluctant when broccoli-slaw appeared on the dinner radar last night. In fact, I took the "token serving" in case it lived up to my worst fears. Suffice it to say that I went back for seconds and even ended up looking for the leftovers the next day. I was even more excited to learn that you can buy this packaged in the grocery store and make your own dressing! Who knew? Okay, probably everyone that doesn't avoid the "slaw" section of the grocery store...but I did not. Here goes:

Broccoli Slaw with Lemon Dressing

Ingredients:

1/2 cup  marscapone cheese
3 tablespoons lemon juice
2 tablespoons mayonnaise
1 tablespoon white wine vinegar
2 teaspoons grated lemon peel
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 packages (12 ounces) broccoli coleslaw mix
1 chopped apple

In a large bowl, mix the first eight ingredients. Add coleslaw mix and apples; toss to coat. Refrigerate, covered, until serving. Yield: 10 servings

Note: The original recipe called for 1 package of slaw mix with the dressing described above. My sister-in-law made it with 2 packages as written above and I think it was better and did not get soggy.

Note Number 2: Do not email me about posting a non-paleo recipe including mayo and cheese unless there is ZERO sugar, gluten, or other processed carbs in your diet.
